Cashew milk threeway

It’s time to queue some Barry White and dust off that (faux) bearskin rug, because the cashew is one sexy nut! I personally think it has a softer mouthfeel and richer flavor than its more popular pal, the almond. In honor of my favorite flavor-endowed legume, I’m giving it to you three ways: Mexican chocolate, maple vanilla and strawberry cardamom.

Making cashew, or any nut milk for that matter, is really simple and tastes so much better than the store bought stuff. All you need are some soaked nuts, water, a blender and something to strain it with. I use a nut milk bag (not as sketchy as it sounds) but if you’re not ready to commit you can use a fine mesh strainer to good effect. Once you have all that sorted, start with the basic recipe and take it where you want from there. I have a few suggestions below, but you can play with fruits, powders, spices, the level of sweetness… the variations are endless. Promise me you won’t skimp on the salt. I find that it plays a crucial role in bringing out the flavors.

 


 

Basic cashew milk recipe

makes about 4 cups unflavored cashew milk

 

1 cup soaked raw cashews
4 cups water

 

Soak the cashews for 4 – 6 hours. Rinse and drain. Blend cashews and fresh water thoroughly in a high power blender on high speed for at least a minute. Strain with a nut milk bag or fine mesh strainer.

 

Mexican chocolate cashew milk recipe

This guy’s a little bit spicy. I like it as an afternoon pick-me-up.

 

2 cups basic cashew milk

2 tbsp raw cacao powder

2 tbsp agave nectar

1/2 tsp ground cinnamon

1/4 tsp good vanilla extract

1/4 tsp kosher salt

pinch of cayenne pepper

 

Blend all ingredients in a high-speed blender.

 

Maple vanilla cashew milk recipe

This has a very mellow flavor. It’s a great basic for cereal, etc.

 

2 cups basic cashew milk

2 tbsp good maple syrup

1/2 tsp good vanilla extract

1/4 tsp kosher salt

 

Blend all ingredients in a high-speed blender.

 

Strawberry cardamom cashew milk recipe

This one’s bright and fruity. A good treat any time!

 

2 cups basic cashew milk

2 tbsp raw honey

5 – 6 strawberries

8 green cardamom pods, ground

1/4 tsp kosher salt

 

Blend all ingredients in a high-speed blender and strain through a fine mesh strainer.

 

These can all hang in the fridge for a few days. Separation will occur so shake ‘em up before drinking. Cheers!

  1. I totally want to join in on this three-way.

    My juicer allegedly makes great nut milks but I haven’t tried yet. I think cashew milk would be a great way to break it in, if you know what I mean.
