Banana cocoa chia pudding

I can’t remember the last time I was woken up by the rain. This morning after the falling drops shocked me out of my slumber, I enjoyed a few minutes cozied up under the covers listening to the sky open up. There’s something so comforting (and very fortunate) about being warm and dry while the drama unfolds outside. I’ve decided to make comfort the theme of the day (wet dog walk and impending trip to the dentist be damned) which I’m kicking off with a hot cup of tea, some favorite rainy day tunes and chocolate for breakfast! I originally made this pudding as an afternoon snack, but the leftovers made for a seriously delicious and comforting breakfast. I’m no stranger to chia pudding, but hadn’t veered too far from making it with some nut milk and perhaps a date for sweetness, until I started seeing these cute little chia pods from the Chia Co popping up at various grocery stores. Several of the flavors combine pureed fruit with coconut milk as the base for the pudding while others include coffee bean and dark cacao. Banana, mango and blueberry have become staples in my breakfast repertoire, but I haven’t been able to find dark cacao! Impatient as I am, I decided to make my own version and threw in some bananas for good measure. It’s quite delicious, though not very sweet as I’m been trying to cut back on all things sugary these days. You could throw in a date or two if that sweet tooth of yours needs a fix.

Banana cocoa chia pudding


1 cup coconut milk

1 cup coconut water

2 organic bananas

3 tablespoons cocoa powder

pinch salt

1/2 cup chia seeds

optional garnishes: cocoa nibs and banana slices


Combine everything except the chia seeds in a high-powered blender and blend on high speed until smooth. Add the chia seeds and on the lowest setting, blend just until combined. Pour into a container (I suggest a wide mouth jar with a lid) and shake or stir every couple of minutes to prevent the seeds from clumping. After 10 minutes refrigerate until set, at least 2 hours to overnight.

  1. Exactly what I need! As you know I’m also trying to eat healthy and I couldn’t find anything that fits my plan but also pleases my sweet tooth. Now I found it! :)
